Ingredients
2 C balsamic vinegar
2 lge tomatoes
8 oz LF mozzarella
1 sm red onion, diced
2 T extra virgin olive oil
10 leaves fresh basil, cut into thin strips
Fresh black pepper
Place balsamic vinegar in a small pot over
medium-high heat. Allow liquid to reduce by
half, then set aside to cool.
Slice tomatoes into medium-thick slices and arrange them on a plate. Slice cheese in medium slices and the red onions overtop. Pour oil, then balsamic vinegar, overtop the dish. Garnish with the basil and pepper and serve.
