Turkey Chili

    Ingredients

      6 oz cooked turkey breast
      2 tsp white vinegar
      1 tsp ground cinnamon
      1 tsp canola oil
      1 C frozen chopped onion
      2 med cloves garlic, crushed
      1 C canned red kidney beans, rinsed/drained
      2 C canned whole tomatoes, no added sugar or salt
      1/2 T chili powder
      1 tsp ground cumin
      Salt & ground black pepper, to taste
      1/2 C - RF sour cream
      1/2 C fresh chopped cilantro


    Cut turkey into 1/2-inch cubes. Place in a bowl sprinkle with vinegar and cinnamon, mix well.. Heat oil in pan over medium-high heat, add onion and garlic. sauté 1-2 minutes, do not brown. Add kidney beans, tomatoes, chili powder, and cumin. Break up tomatoes with a spoon. Simmer gently 15 minutes. Add turkey and simmer 5 minutes.. Add salt and pepper to taste. Add more chili powder or cumin as needed.

    Serve with sour cream and cilantro on the side.
