Turkey Stroganoff

    Ingredients

      1 lb ground lean turkey
      1 tsp vegetable oil
      1 small onion/chopped
      2 garlic cloves/minced
      1/2 lb fresh mushrooms/sliced
      2 T arrowroot
      3/4 C Chicken Broth
      3/4 C white wine
      Pinch red (cayenne) pepper
      1 tsp poppy seeds
      1 C plain LF yogurt


    In a large non-stick skillet, brown turkey, about 10 minutes. Drain, remove from pan and keep warm.

    Heat oil in skillet cook onion and garlic until softened.. Add mushrooms cook until soft.. Stir in arrowroot, broth, and wine bring to a simmer, stir until sauce thickens, add salt, pepper and poppyseeds.

    Return turkey to skillet and simmer, stirring, about 5 minutes.. Remove from heat, stir in yogurt..
