Washington State Apple Butter

    Yield: 3 Cups (24 Servings)

    Ingredients

      2-1/2 lbs Golden Delicious apples/cored/cut into eighths
      2 T fresh lemon juice
      3/4 tsp ground cinnamon
      1/8 tsp ground cloves
      1/8 tsp ground mace
      1 T brown sugar


    Combine apples, 3/4 cup water, and lemon juice in a large pot. Bring to a boil over medium-high heat. Cover and simmer for 30 minutes/Drain.

    Push apples through a food mill or strainer to puree removing skin.. Return applesauce to pot of water; add cinnamon, cloves, mace, and brown sugar. Simmer,uncovered, over low heat until thickened, about 45 to 60 minutes, stir often.

    Cover and refrigerate. Apple butter keeps in the refrigerator for 1 week. Freeze for longer storage.
