Whipped Sweet Potatoes W / Caramelized Shallots

    Ingredients

      1 tsp olive oil
      3 oz shallots, cut into 1/4-inch pieces
      2 qts water
      1 lb fresh sweet potatoes, peeled, diced into 1-inch pieces
      1 tsp salt
      1/4 C evaporated skim milk
      2 T margarine
      1/4 tsp white pepper
      1/4 tsp cinnamon or nutmeg


    Heat olive oil in a pan over medium-high heat…Add shallots and cook until they turn golden, about 3-5 minutes. Remove from the pan and set aside.

    In medium pot, bring water to a boil. Add sweet potatoes and salt. Return the water to a boil and cook for 10-15 minutes, or until the potatoes are tender.

    Using an electric hand mixer, combine sweet potatoes, half the cooked shallots, and the remaining ingredients until they are thoroughly mixed. Serve immediately with the remaining shallots as a garnish.
