Apricot Chicken

    Ingredients

      4 boneless, skinless chicken breasts
      salt & pepper
      1 cup apricot preserves
      1 package dry onion soup mix FOR RUSSIAN DRESSING
      1 cup fat free mayonnaise
      1 Tbsp. horseradish
      1 tsp. Worcestershire Sauce
      1/4 cup ketchup or chili sauce
      1 tsp. grated onion


    Season the chicken with salt & pepper and set aside

    on a foil covered cookie sheet. Mix the preserves, Russian dressing and soup mix. Pour over chicken, Bake for about 30 minutes or until golden.
