Asparagus Beef

    Ingredients

      12 oz. lean steak, cut into thin strips
      1 T. dry sherry
      1 T. soy sauce
      1 T. oil
      2 T. water
      1/4 t. sugar
      2 t. cornstarch
      1 clove garlic, minced
      1/2 t. fresh ginger root, minced
      6 mushrooms, sliced
      1 lb. asparagus, cut into 1/2" slanting slices
      cooking sauce (recipe follows) Stir together sherry, soy, 1 T. water, sugar, and cornstarch. Add beef and stir to coat and let marinate at room temperature for 15 minutes.

      Meanwhile, prepare cooking sauce and set aside. Place wok or large skillet over high heat. When it is hot, add 2 Tsp oil. Add garlic and ginger and stir once. Immediately add beef mixture and stir-fry until meat is browned, about 2 minutes. Remove from wok and set aside.

      Add remaining oil to wok. When it is hot add mushrooms and asparagus; stir-fry one minute. Add remaining 1 T water, cover, and cook for 2 minutes. Return meat mixture to wok.

      Stir in cooking sauce and cook until sauce boils and thickens. Serve immediately.

      Cooking sauce: Stir together 2 T. oyster sauce, 1 T. cornstarch, and 1/2 c. chicken broth.
