Ingredients
1 T. vegetable oil
1 1/2" piece ginger root, peeled
1 lb. lean steak, sliced thinly across the grain
1/2 c. sliced bamboo shoots, drained
6 large mushrooms, wiped clean and sliced
30 snow peas, ends and strings removed
1/2 c. chicken stock
2 T. oyster sauce
1/2 t. soy sauce
1/4 t. sesame oil
1/4 t. sugar
1/2 t. salt
1 T. cornstarch mixed with 1 T. cold water
Heat oil in wok or large skillet. Swirl ginger root in oil for about 1 minute, or until fragrant. Remove and discard ginger.
Add half of beef; stir-fry one minute. Add remaining beef; stir-fry one minute.
Add next 4 ingredients; cover; cook for 2 minutes.
Meanwhile, mix next 5 ingredients. Uncover; add oyster sauce mixture and cornstarch mixture; cook until sauce thickens. Serve immediately.
