Ingredients
1 lb. boneless, skinless chicken breasts, cut into 1" cubes
1 T. cornstarch
1 T. dry sherry
1 T. soy sauce
1 T. oil
1/4 lb. fresh mushrooms, wiped clean and sliced
2 green peppers, cored, seeded, and cut into 1" pieces
1 heaping T. hoisin sauce
Salt to taste
1 oz. cashews (about 14)
Sprinkle the chicken with cornstarch; toss to coat.
Add sherry and soy sauce; marinate 15 minutes at room temperature.
Heat oil in wok or large skillet. Add chicken; stir-fry 3 minutes.
Add mushrooms and peppers; stir-fry 1 minute. Add hoisin sauce and salt to taste. Toss to mix. Garnish with cashews. Serve immediately.
