Florentine Roll-Ups

    Servings: 12 / Units= 5.5 per (1) roll up
    (11 pts per serving (two rollups).


    Ingredients

      12 lasagna noodles
      2 eggs, lightly beaten
      2 1/2 C ricotta cheese ( RF)
      2 1/2 C shredded mozzarella (part skim)
      1/2 C grated Parmasan cheese
      1 pkg (10 oz) frozen chopped spinach,
      ( thawed and squeezed dry)
      1/4 tsp salt
      1/4 tsp pepper
      1/4 tsp ground nutmeg
      1 jar (26 oz) meatless spaghetti sauce


    Cook lasagna noodles according to package directions; drain and lay flat on wax paper. In a bowl, combine the eggs, cheeses, spinach, salt, pepper and nutmeg.

    Spread 1/3 cup cheese mixture over each noodle; carefully roll up.

    Pour 1 cup spaghetti sauce in an ungreased 13x9 baking dish. Place roll-ups seam side down in sauce. Top with remaining sauce.

    Bake uncovered at 375 for 20-25 minutes or until heated through. Yield 6 servings=(2 roll-ups=11 units)

    I would do one roll up with a salad and a roll !!
