Ingredients
1 pound sweet potatoes/peeled
Cooking spray
1 tablespoon cornstarch
3/4 cup orange juice
1 tablespoon brown sugar
2 tablespoons lemon juice
Preheat oven to 425 degrees.
Cut sweet potatoes into 1/2-inch-thick slices; place in a 1-quart casserole coated with cooking spray. Combine cornstarch and next 3 ingredients in a bowl; stir well. Pour over potatoes.
Cover; bake at 425 degrees for 45 minutes or until potatoes are tender.
