Oven-Fried Chicken Breasts

    Ingredients

      1/4 cup dry breadcrumbs
      1 tablespoon grated Parmesan cheese
      1 teaspoon paprika
      1 teaspoon dried thyme
      1/2 teaspoon garlic salt
      1/4 teaspoon ground red pepper
      1/3 cup lowfat buttermilk
      4- 6-oz. skinned chicken breast halves
      -- (not boneless) cooking spray
      1 T stick margarine or butter -- melted


    Preheat oven to 400º. Combine first 6 ingredients in a shallow dish.

    Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, bone sides down, in a jelly-roll pan coated with cooking spray. Drizzle margarine over chicken.

    Bake at 400º for 40 minutes or until done.
