Santa Fe Rice and Beans

    Ingredients

      2 C Cooked Rice
      2 C Frozen Corn
      16 oz can Pinto Beans
      1 can diced Rotel brand tomatoes
      4 oz Velveeta Lite


    In Crockpot, add cooked rice, then corn, pinto beans, and Rotel, add cheese that has been chunked. Cook on low until cheese is melted and mixture is thoroughly heated.

    1 Cup is considered a serving.
