Scallops Newburg

    Ingredients

      1/4 cup bread crumbs
      2 tsp LF margarine, melted
      2 T flour
      1/4 tsp salt
      1/8 tsp ground red pepper
      1 1/2 C 1% milk
      1 egg yolk
      1 lb bay scallops, rinse,drained and patted dry
      1/2 lb mushrooms, cleaned and sliced
      3 scallions, sliced
      2 T chopped fresh tarragon or 2 tsp dried


    Preheat oven to 400*. Spray 4 round baking dishes with cooking spray. In a small bowl, combine breadcrumbs and margarine. Toss to mix, and set aside. Place flour, salt and pepper in a medium saucepan. Gradually stir in milk until blended. Cook stirring constantly over medium heat 5-7 minutes until mixture thickens. Add egg yolk. Cook stirring constantly 2 minutes or until mixture bubbles.

    Coat a medium non-stick pan with cooking spray,place over medium heat. Add scallops to pan.Cook 2-3 minutes, turning once.Transfer scallops to sauce. add mushrooms, Cook stirring occasionally 2-3 minutes. Add scallions and tarragon; cook additional minute. Add to scallops and sauce. Divide scallops into the four prepared dishes. Sprinkle with breadcrumbs.

    Bake for 6-8 minutes; or until golden and bubbly.
