Zucchini Meatloaf Muffins

    Ingredients

      16 oz lean ground beef
      1/2 c & 1 Tbsp dried fine bread crumbs
      1/4 c finely chopped onion
      3/4 c shredded unpeeled zucchini
      2 tsp italian seasoning (separated)
      8oz can tomato sauce (separated)
      2 tsp Splenda
      1/2 c & 1 Tbsp RF mozzarella cheese shredded

      Special Notes : Add garlic powder, salt and pepper if you like spicer .

    Preheat oven to 375. Spray 6 regular size muffin pan with cooking spray.

    In a large bowl combine meat, bread crumbs, onion, and zucchini, 1 tsp Italian seasoning, and 1/2 of the tomato sauce. Mix well. Evenly divide meat mixture between muffin cups and make an indentation in the center of each.

    In a small bowl combine the remaining tomato sauce, splenda, and 1 tsp Italian seasoning. Stir in mozzarella cheese. Evenly spoon about 1 Tbsp of sauce mixture into the indentation of each muffin.

    Bake 35 minutes. Place muffin pan on a wire rack and let set for 5 minutes.
