Ingredients 1/2 C eggbeaters 1/2 pkg. frozen spinach 1/2 C reduced fat cheese 1/4 onion salt and pepper to taste. Mix all ingredients, Pour in foil muffin liners sprayed with pam. Bake in muffin tins at 350 for 20 min.
