Ingredients
1-3/4 C chicken broth
2 tsp grated lemon zest
2 T fresh lemon juice
1 T unsalted butter or margarine
1/4 tsp salt
1 box (10oz) couscous
1T chopped parsley
In a medium saucepan, combine broth, lemon zest, lemon juice, butter and salt, bring to a boil.
Stir in couscous and parsley, cover and remove from the heat.
Let stand until liquid is absorbed, about 5 minutes. Fluff couscous with a fork.
