Tortellini W/ Prosciutto & Peas In Cream Sauce

    Servings: 4/ 6 Units per serving


    Ingredients

      ½ lb. Cheese tortellini
      1 C frozen peas
      ¼ lb deli-sliced prosciutto, chopped
      2 T all-purpose flour
      1 C whole milk
      ½ C grated Parmesan cheese
      ½ tsp black pepper


    Bring large pot of water to a boil. Add tortellini and cook according to package directions. Stir in peas during the last 2 minutes of cooking; drain.

    Coat lge skillet with nonstick spray, on medium heat Add prosciutto and cook, stirring occasionally until browned, 2-3 minutes. Remove and reserve the prosciutto.

    In a small bowl, Dissolve flour & milk add to skillet, stir constantly, until thickened, 8-10 minutes. Remove from heat, stir in Parmesan cheese and pepper, Add the prosciutto, tortellini, and peas toss to coat.
