Three Bean Salad

    3/4 cup=2 Units

    Ingredients

      1 C green snap beans, chopped into bite-sized pieces
      1/2 C cooked lima beans, canned or fresh
      1/2 C cooked garbanzo beans, canned or fresh
      1 C green peas, fresh or frozen and thawed
      1/2 medium red onion(s), minced
      1/4 C balsamic vinegar
      1/2 tsp olive oil
      1/2 tsp dry mustard
      1/2 tsp dried basil
      1/2 tsp dried oregano
      1/4 tsp table salt


    Mix beans, peas and onion together in a medium bowl. Combine remaining ingredients and toss with beans . Cover and marinate in refrigerator for at least 4 hours or up to overnight.

    Yields: 3/4 heaping cup per serving.
