Ingredients
1 lb uncooked boneless, skinless chicken breast
1/2 C celery, finely diced
1/3 C dill pickles, or sweet gherkins, finely diced
1/4 C RC mayonnaise
2 T- RF sour cream
2 T parsley, fresh, chopped
1 tsp Dijon mustard
1 tsp fresh lemon juice
1/2 tsp table salt
1/4 tsp black pepper
Place chicken in a large saucepan with enough water to cover; Boil until throughly cooked about 10 minutes; drain/cool and cut into 1 inch cubes.
Transfer chicken to a large bowl add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper.. Mix until blended…1 cup per serving.
