Creamy Tortellini & Vegetable Salad

    Ingredients

      1/4 lb frozen cheese tortellini
      5 oz frozen sugar snap peas/thawed
      1 T FF mayonnaise
      1 T white balsamic vinegar
      1 T RF parmesan cheese
      12 cherry tomatoes, cut in half
      2 T finely chopped red onion


    Cook Tortellini according to package directions, add sugar snap peas during the last 2 minutes of cooking time…Drain/rinse under cold water until slightly cooled, set aside….
