Miami-style Coleslaw

    Ingredients

      1/2 C cider vinegar
      3 T sugar, or to taste
      1 tsp salt, or to taste
      1/2 tsp freshly ground black pepper
      1/2 tsp celery seeds
      1 sm head green cabbage
      (about 1 lb – need 6 C shredded)
      2 lge carrots, coarsely shredded


    Combine the vinegar, sugar, salt, pepper and celery seed in a bowl, whisk or shake well until the salt and sugar crystals are dissolved.

    Shred cabbage as thin as possible. Stir cabbage and carrots into the vinegar mixture. Allow to pickle for at least 1 hr or overnight. Adjust seasoning, Refrigerate.
