Cauliflower Cheese Soup

    Yields: 4 C/ Units for whole recipe=4


      1 can FF chicken broth (or 2 C home made)
      1 lb cauliflower florets (about half a head)
      1 C rough chopped onion & carrot (combined )
      1/4 T olive oil
      3 oz. Velveeta light
      salt & pepper to taste

    Saute onion and carrot in olive oil, (spray pan with Pam),on medium high to high heat… When onion and carrots are soft, add cauliflower and broth… Simmer until all veggies are done… Put in food processor with cheese and most of the broth and puree until smooth.
