Crock-pot Beef Stew

    Ingredients

      ½ lb stew beef
      3 lge carrots
      5 med white potatoes
      3/4 C barley
      48 oz. can of V-8 juice


    Wash and peel carrots, Chop diagonally add to the crock-pot. Clean & Chop potatoes into large chunks add to the crock-pot. Pour in V-8 juice, Add stew meat. Wash barley and add to the crock-pot .Stir well.

    Cover crock-pot turn to high. Allow to cook for 6-8 hours, or until the root vegetables are soft.
