Lemon Chicken Soup

    Servings: 8 /Units per serving=2


      1 lb chicken breast cut into 1" pieces
      2 carrots, thinly sliced
      8 scallions, sliced
      2 stalks celery, sliced
      2 cloves garlic, minced
      1 1/2 tsp dried mint and oregano
      2 bay leaves
      2 cans FF chicken broth (14.5 oz each)
      1 can 15 oz. chickpeas, drained and rinsed
      2 lemons, juiced

    Spray Pan with olive oil cooking spray. Brown chicken on all sides over medium heat…Add carrots cook 3 min, Add next 6 ingredients cook 5 min, stirring frequently.

    Add chicken broth, bring to a boil, Reduce heat, simmer 20 min.

    Add chickpeas and lemon juice, cook 5 minutes
