Vegetable Beef Barley Soup

    Servings: 10 / Units per serving= 5 One serving = 2 cups.


      6 cloves garlic, minced
      1 1/2 c. onions, chopped
      1 pound mushrooms, chopped
      8 oz. uncooked lean ground beef, chopped
      8 c. fat-free beef broth
      32 oz. canned tomatoes
      2 c. celery, sliced
      2 c. carrot, sliced
      2 c. uncooked barley
      3 pieces bay leaf
      16 oz canned kidney beans
      2 c. water
      3 tsp. beef bouillon

    Saute onions, garlic and ground beef together. Add chopped mushrooms.
    Cook until ground beef is done.

    In large pot, add all ingredients except barley. When soup comes to a boil, add barley. Simmer for at least one hour.
