BAKED ONION RINGS

    Ingredients

      4 T all-purpose flour
      1/2 tsp salt, ground pepper
      2/3 C bread crumbs,
      1/2 C FF egg substitute
      2 -(8-oz) onions, peeled, sliced 1/4-inch thick, separate into DOUBLE RINGS


    Preheat the oven to 400

    Spray nonstick baking sheet with nonstick spray. On a sheet of waxed paper, combine flour, salt, and pepper. Place the bread crumbs on another sheet of waxed paper. Place the egg substitute in a shallow dish. Coat each double onion ring on both sides with the flour mixture, shake off excess; dip into the egg substitute, then coat lightly with the bread crumbs.

    Arrange the rings on the baking sheet, and spray the tops with nonstick spray. Bake on top oven rack until browned, 10 minutes. Turn carefully and bake until browned, 5 minutes.
