Ingredients
4 C cauliflower florets
1 1/2 T cornstarch
1 1/2 C skim milk
1/2 C shredded RF cheddar cheese
1/4 C grated Parmesan cheese
1/8 tsp dry mustard
1/8 tsp pepper
1/2 C dry breadcrumbs
Steam cauliflower until crisp-tender. Place cauliflower in a shallow glass baking dish sprayed with cooking spray.
Combine milk and cornstarch in saucepan and cook over medium heat until thickened, stirring constantly. Stir in cheddar cheese, 1 tablespoon Parmesan cheese, mustard and pepper, continue to cook & stir until cheese melts.
Pour sauce over cauliflower, sprinkle with remaining Parmesan cheese and breadcrumbs. Broil for 5 minutes or until heated through and breadcrumbs begin to brown.
