Ingredients
1/4 C chicken broth
1 med onion, chopped
2- 10 oz. pkg frozen, chopped spinach, thawed and drained well
1 C part-skim ricotta cheese
1/4 C- RF Parmesan cheese
1/4 tsp ground nutmeg
1 T garlic powder
salt and pepper to taste
1 8 oz can tomato sauce
1 tsp Italian seasoning
1 tsp garlic powder
Preheat oven to 350, Spray 9" pie pan or shallow casserole dish with nonstick cooking spray
Put chicken broth and onions in skillet Cook over med-high heat stirring frequently, until lightly browned, about 5 minutes, Remove from heat.
Add spinach, both cheeses, nutmeg, garlic powder, salt and pepper to skillet, Mix well, spoon into prepared pan, and smooth top, Combine tomato sauce, Italian seasoning and garlic. Spoon over spinach mixture
Bake, uncovered 25 minutes.
Let stand 5 minutes before serving
