Ingredients
1 1/2 lb lean ground beef
1 lge onion, chopped
1 lge green pepper, chopped
1 jalepeno pepper, minced
1 1/2 C bread crumbs
1 egg
1 T dried parsley flakes
1 tsp dried basil
1 tsp Italian seasoning
1/8 tsp pepper
2 cans ( 8 oz each) tomato sauce, divided
2 medium tomatoes, coarsley chopped
5 medium zucchini
2 C (8 oz) shredded part skim mozarella cheese
Brown ground beef, Combine first 10 ingredients with one can tomato sauce; mix well. Stir in tomatoes.
Halve zucchini lengthwise, scoop out seeds. Fill with meat mixture; place in two 13 x 9 in x 2 in baking dishes. Spoon remaining tomato sauce over each.
Bake, uncovered, at 375 for 45 minutes or until the zucchini is tender. Sprinkle with cheese last few minutes of baking.
