Ingredients
1 -14 oz Can Stewed Tomatoes W /Juice
1/3 C Chopped Onion
salt & black Pepper
Fresh Parsley & Basil
minced garlic to taste
1/2 C - FF Cheddar Cheese, Shredded
Combine chopped tomatoes and onion in a small pan, cook over medium-high heat.
Slice zucchini in half lengthwise, Scoop out center leaving 1/2 inch shell, chop removed zucchini add to pan Stirring occasionally until liquid has reduced and thickens.
Remove from heat, Stir in the rest of the ingredients and fill zucchini shells..
Spray cookie sheet, Bake in Preheated 375 degree oven 30-40 minutes or until zucchini is tender.
