Twice Baked Bacon Cheddar Potatoes

    Ingredients

      2 lg russet potatoes/scrubbed
      4 T FF sour cream
      2 T bacon bits/crumbled
      1/2 C shredded Co-Jack cheese


    Preheat oven to broil. Bake potatoes in the microwave. Cool for 5 minutes.
    Halve potatoes lengthwise scoop out potato flesh into a medium bowl, leaving a 1/4 inch shell.
    Mix potato flesh, sour cream, bacon bits and 1/4 cup cheese. Place mixture back in potato shell. Top with remaining 1/4 cup cheese.

    Place on the broiler rack. Broil until cheese is melted and bubbly, about 5 minutes.
