An Easy Chili
Ingredients:
- 2 lb ground beef
- 2 Tbsp chili powder (more to taste)
- 2 tsp ground cumin
- 1/2 tsp crushed oregano
- 1 Tbsp onion powder
- 1 tsp garlic powder
- 2 Dashes cayenne or hot pepper sauce (More if you dare!)
- Salt & pepper to taste
- 1 large can whole tomatoes, crushed (or use 1 large can crushed tomatoes)
- 1 large can Brooks mild chili beans
- 1 small can Brooks HOT chili beans
- 2 dashes red wine vinegar
- 1 to 2 tsp plain cocoa
- Cooked spaghetti or macaroni (opt)
- Grated cheddar & Jack cheese (opt)
- Chopped onion (opt)
Brown beef in large pot. Drain off excess fat. Mix in seasonings, then add tomatoes. Simmer this at least 15-20 mins. Add chili beans, vinegar, and cocoa. Mix well and simmer another 20 mins. Salt and pepper to taste. Serve with cooked pasta on side. Cheese and onion sprinkled on top is optional.
Cook's Notes:
If you don't have red wine vinegar on hand, use plain apple cider vinegar. Cocoa is plain unsweetened baking type -- like Hershey's.
I ususally don't put salt in this chili -- the tomatoes and beans are seasoned but it's a matter of personal preference. I also like to put pasta on bottom of bowl then top with chili.
You can use purchased shredded cheese instead of grating it yourself -- I do!
Finally, good accompaniments:
Hot cornbread, crackers, corn chips, or tortilla chips make good chili partners. A good cold beer is always welcome. :-)
