Ingredients:
1 Cup yellow or white cornmeal (White for true southern style, but yellow is OK)
1 egg, well beaten
1 tsp. salt
Boiling water
Oil for frying
Instructions:
Mix together cornmeal, salt, and egg. Add enough boiling water to make a slightly thick smooth batter. The dry ingredients should hold together but not be sloppy wet.
Heat oil in fry pan.
Drop batter by tablespoonfuls into hot oil. Fry until golden brown. Serve hot with butter.
