BLACK-EYED PEA DIP

2 Tb. vegetable oil
2 15oz. cans blackeyed peas, drained and partially smashed
1 small onion, chopped
1 can Ro-Tel tomatoes
Shredded cheddar and/or Jack cheese (about 1/3 Cup)

Heat oil in skillet. Add onion and cook until onion is soft and transparent -- Do Not Let Brown!

Add smashed peas and cook until peas are heated through. Mix in Ro-Tel. Transfer to serving bowl and top with cheese.

Serve with tortilla chips or fresh veggies.
