Dear Abby's Famous Pecan Pie
Just in time for the holidays, from Thanksgiving through Christmas, maybe beyond. This has to be the best pecan pie recipe on the planet. Very easy to put together, and most ingredients are already on in your pantry and refrigerator. To save time, use either the refrigerated or frozen pie crust.
Ingredients:
1 cup light corn syrup
1 cup firmly packed dark brown sugar
3 eggs, slightly beaten
1/3 cup butter, melted
1/3-1/2 teaspoon salt
1 teaspoon vanilla*
1 cup pecan halves*
Directions:
- Heat oven to 350 degrees.
- In a large bowl, combine corn syrup, sugar, eggs, butter, salt and vanilla; mix well.
- Pour filling into unbaked pie crust.
- Sprinkle with pecan halves.
- Bake for 45- 50 minutes or until center is set.
(Toothpick inserted in center will come out clean, when pie is done.)
- If crust or pie appears to be getting too brown, cover with foil for the remaining baking time.
- Cool.
Serve with whipped cream. Of course, a cup of strong, hot coffee is an excellent accompaniment to sweet — and rich — pecan pie.
Cook's Note: Ms. Webbilicious likes to double-up on pecans and vanilla. That's 2 C. pecans and 2 tsp. vanilla. Believe me, it's worth it for nut lovers!
