Cornbread Dressing Patties

Nice way to serve is to surround the turkey (on the platter) with the patties.

2 cups chopped celery
3 cups chopped onion
1/2 pound of butter
2 (9") pans baked cornbread
4 to 6 slices toasted white bread
2 to 3 cups chicken or turkey broth
2 eggs, beaten
1/4 tsp. sage
1/3 cup chopped fresh parsley
salt & pepper to taste
Sauté celery & onion in butter until limp & yellow. Combine cornbread into mixture & add torn pieces of toast. Add broth slowly, 1 cup at a time, until mixture is moist. Add beaten eggs, sage & salt & pepper.

Lightly grease a large cookie sheet.

Shape dressing into 3 inch patties (about 24 to 30) & bake at 375 degrees until lightly brown & crispy.
