Even if you do not like hominy, you will love this salad. Here is
another old recipe.
I can vouch for the goodness of this salad.
1 (15 1/2 oz) can of hominy, white
1/4 cup chopped green bell pepper
2 tablespoons chopped onio1 cup sliced celery
1/4 cup drained pickle relish or sliced green olives
1 teaspoon salt
1/4 tespoon black pepper
1/4 teaspoon celery seed
1 cup cubed or shredded cheese, cheddar
1/4 cup mayonnaise
Drain and rinse hominy well. Combine with remaining ingredients. Cover
and chill 1 hour.
Serve over lettuce wedges, top with tomato slice and dollop of
additional mayonnaise.
To make a main dish out of this recipe add 1 can of tuna, well drained
or 1 cup diced or cubed ham, or 4 chopped hard-boiled eggs. This usually
serves 4 to 6 people.
