Mahony Rice

5 strips of bacon, diced
1 medium white onion, chopped
1 med green bell pepper, chopped
8 cloves fresh garlic, chopped
1 cup white rice, rinsed in cold water
1/3 c. plus 2 tbsp soy sauce
1 2/3 cup water
1 8oz can mushrooms, drained
2 small cans shrimp, drained or 1/3 lb fresh cocktail shrimp, cooked**
1 40z jar pimentos, drained
6 tbsp fresh chopped parsley

Fry bacon until crisp, drain, remove from pan and crumble, set aside In bacon drippings saute onion, green pepper and garlic until onion is clear in color, drain and add to bacon.

In a saucepan combine rice with soy sauce and water ...bring to a boil, cover, reduce to simmer, cook until all liquid is absorbed. Remove lid and continue to cook on very low heat to drive any remaining moisture.

After about 10 mins., stir in bacon mixture, add 1/2 of shrimp, parsley, and pimentos. Transfer to casserole dish and add remaining shrimp, parsley, and pimentos for garnish.

Serve at once.
Makes 6-8 servings.

**Sometimes I double the recipe and add 1 can each of shrimp, oysters, crabs, clams, drained or a combination of any of the above. No left over with this dish.
