Rice Dressings

2 tablespoons olive oil
1 cup onion, chopped
1 cup green peppers
1 tablespoon garlic
1/2 cup celery
2 pounds ground beef
1 pound ground pork
3 cups chicken broth
6 cups cooked rice
1 tablespoon Worcestershire sauce

Saute first 5 ingredients until good and hot. Then add beef, pork and chicken broth; simmer 5 minutes. Add 6 cups cooked rice and 1 tablespoon Worcestershire sauce. Mix well and simmer 5 minutes. Pour into baking pan and bake in a preheated 350-degree oven until golden brown.

Rice Dressing Casserole

1/2 pound lean ground pork
1 cup chicken gizzards, liver and heart giblets
1 cup raw rice
1 cup onion soup with beef stock
1 can cream of mushroom soup
1/2 cup green onion tops, chopped
1/2 cup chopped celery
1/2 cup chopped onions
1/2 cup chopped bell pepper
1/2 cup parsley
Salt and pepper to taste

In heavy pot, brown ground pork with vegetables; drain excess oil, if any. In seasoned water, boil giblets until tender and grind very fine. In deep casserole dish, combine pork, vegetables, giblets, rice and soups. Cover with aluminum foil and bake at 325 degrees for about 2 hours.

Easy Rice Dressing

1 pound ground meat
1/2 cup green onion tops, chopped
1/4 cup chopped parsley
1/4 cup chopped celery
1 can cream of mushroom soup
1 can onion soup
1/2 cup water
1 cup uncooked rice

Preheat oven to 325 degrees. Brown ground meat in large skillet. Mix chopped onion tops, parsley and celery with meat. Add raw rice and both cans of soup; mix well. Add water and stir together. May be put in large Corning dish or oven pan. Cover with aluminum foil and bake for 11/2 hours. Makes 6 to 8 servings.

Rice Dressing

1 pound ground meat
1 onion
1 can Cheddar cheese soup
1 can chicken noodle soup
1 can cream of mushroom soup
1 cup raw rice
Salt and pepper to taste

Brown ground meat and onion. Add 3 cans of soup. Add rice and bake at 350 degrees until rice is tender, about 1 hour.
