Mexican Cole Slaw

Dressing:
1/2 c. reduced fat mayo or reg mayo
1/2 c. bottled taco sauce
2 tablespoons cider or white vinegar
1 tablespoon sugar
1 teaspoon cumin
In a large bowl whisk all ingredients together until well blended. Set aside.

Slaw
1 head of cabbage, shredded
2 large carrots, shredded
3 medium green onions, sliced thin, plus green part
1 can chili beans, hot or medium
2 medium jalapeno peppers, seeded, minced
1 c. day old rice (can not be just cooked rice)
Add to dressing and toss well to coat all ingredients. Refrigerate 1-2 hrs before serving or serve at room temp.
