MEATBALLS WITH TOMATO GRAVY

Ingredients:

1 lb. hamburger
1/4 lb. pork sausage
2 Tbsp. onion (chopped)
1 cup soft bread cubes
cayenne pepper, paprika to taste
1 clove garlic (chopped)
2 eggs (well-beaten)
4 cups tomato juice
1/4 tsp. nutmeg (I omit this as I do not like nutmeg)

Directions:

Combine hamburger, sausage, nutmeg, bread cubes, onion, garlic, eggs, and a few grains of cayenne pepper and paprika. Mix thoroughly, Season to taste. Form in small balls. Roll in flour. Heat tomato juice to boiling. Season with salt and pepper. Drop meatballs into boiling tomato juice. Cover and simmer for 40 minutes.

Serves 8

MASHED POTATOES

Ingredients:

2 1/2 lbs. of cooked potatoes or 1 medium potato per serving
1 small package of softened cream cheese
1/4 cup softened butter or margarine
1 tsp. salt
1/2 tsp. black pepper
6 oz. whipping cream or evaporated milk

Directions:

In a large mixing bowl, mash the potatoes. Add butter, cream cheese, whipping caream, salt, and pepper. Put into baking dish, dot with butter. For decoration, sprinkle paprika on top. Bake uncovered until potatoes are hot.

SOUR CREAM APPLE PIE

Ingredients:

2 cups apples (finely chopped)
3/4 cup sugar
2 Tbsp. flour
1/4 tsp. salt
1 cup sour cream
1 egg
1 tsp. vanilla

Directions:
Mix four, salt and sugar. Stir in egg and sour ceam. Add this mixture to apples and pour into unbaked pie shell. Cook for 10 minutes in a 425 degree oven. Reduce to 350 degrees. When pie is firm, add a crumb crust made with 1/2 cup each of brown sugar, flour and softened butter. Mix and spread on top of pie. Bake 10-12 minutes more.

This pie is good, good, good! After serving this to your husband, you can ask him for about anything you've ever wanted.
