1 & 1/2 cup Flour
1 cup Sugar
1/4 cup Cocoa
1 tsp Baking Soda
1/2 tsp Salt
1/4 tsp Baking Powder
1 & 1/3 cup mashed Ripe Bananas
1/3 cup Vegetable Oil
1 Egg
1 cup Miniature Semisweet Chocolate Chips
Preparation
In a large bowl, combine the first six ingredients. In a small bowl, combine bananas, oil and egg; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees for 20-25 minutes or until cupcakes test done. Cool completely before frosting. Yield: 8-12 cupcakes.
Chocolate Peanut Butter Frosting:
1 cup melted Semisweet Chocolate Chips
1/2 cup softened Butter
1/2 cup Powdered Sugar
1 & 1/3 cups Creamy Peanut Butter
Melt chocolate chips in double boiler or microwave. Set aside. Combine all other ingredients. Beat until smooth. Add melted chocolate chips; beat until smooth. Chill 15 minutes or until thick enough to spread.
