These are a few of my favorite chocolate recipes for pies, cakes, cookies, etc. I built these recipe pages with the help of Lad's Build-A-Recipe Card.

Chocolate Bread Pudding

Ingredients

  • 3 C. soft breadcrumbs
  • 1/4 C. cocoa
  • 1/4 C. chopped peanuts
  • 2 eggs
  • 1/2 C. sugar
  • 3 C. milk
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt

Combine breadcrumbs, cocoa, and peanuts, stirring well. Set aside. Beat eggs at low mixer speed or with wire whisk until foamy. Gradually add sugar, beating well. Stir in milk, vanilla, salt, and breadcrumb mixture. Pour mixture into lightly buttered 1 3/4 qt. casserole. Bake at 350 for 45-50 minutes until set. Serve pudding warm.

Chocolate-Topped Cinnamon Bars

Ingredients

  • 2 C. all purpose flour
  • 1 tsp. baking powder
  • 1 C. sugar
  • 1 tbs ground cinnamon
  • 1 C. butter, softened
  • 1 egg, seperated
  • 1 egg, slightly beaten
  • 1/3 C. sugar
  • 1 tsp ground cinnamon
  • 6 oz. semisweet choc chips
  • 1/2 cup chopped peanuts

Combine first 4 ingredients in a large mixing bowl. Add butter, egg, and egg yolk, mixing well. Press evenly into lightly buttered jellyroll pan. Beat egg white slightly and brush over mixture. Combine 1/3 C. sugar, choc chips, and chopped peanuts; sprinkle over bottom layer. Bake at 350 for 25 minutes. Cool and cut into squares.

Chocolate Quick Bread

Ingredients

  • 1/2 C. butter, softened
  • 2/3 C. packed brown sugar
  • 2 eggs
  • 1 C. semisweet choc chips, melted
  • 1 1/2 C. applesauce
  • 2 tsp vanilla extract
  • 2 1/2 C. all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 C miniature semisweet choc chips

In bowl, cream butter and sugar. Add eggs and melted choc; mix well. Add applesauce and vanilla. Set aside. Combine flour, baking powder, and baking soda. Add to creamed mixture and mix well. Stir in mini chips. Spoon the batter into four mini loaf pans. Bake at 350 for 35-40 minutes until done. Cool in pans for 10 minutes before removing to cool on wire racks. Drizzle glaze over warm bread.


Chocolate Glaze

Ingredients

  • 1/2 C. mini semisweet choc chips
  • 1 tbs butter
  • 2 to 3 tbsp half & half cream
  • 1/2 C. Confectioner's sugar
  • 1/4 tsp vanilla extract
  • Pinch salt

Melt choc chips and butter in a saucepan and stir in cream. Remove from heat; stir in sugar, vanilla and salt. Drizzle over warm bread.

Pumpkin Chocolate Chip Cookies

Ingredients

  • 2 eggs, beaten
  • 2 C. Sugar
  • 1 C. Oil
  • 16 oz can pumpkin
  • 2 tbs milk
  • 2 tsp vanilla
  • 3 1/2 C. flour
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 2 C. choc chips
  • 1 C. chopped nuts

Beat eggs and sugar. Add oil and mix. Add pumpkin, milk, and vanilla and mix again. Add the flour, baking powder, baking soda & cinnamon and mix well. Add the choc chips and nuts and mix until smooth. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 for 9 to 11 minutes. Makes a very moist cookie.

Cow Pies

Ingredients

  • 2 C. choc chips
  • 1 tbs shortening
  • 1/2 C. raisins
  • 1/2 C. chopped nuts

In a double boiler, melt choc chips and shortening, stirring until smooth. Remove from heat; sitr in raisins and nuts. Drop by tablespoonsful onto waxed paper. Chill until ready to serve. This recipe makes about 2 dozen cow pies.

Chocolate Cake

Ingredients

  • 1 C. butter
  • 2 C. sugar
  • 3 eggs
  • 3 C. all purpose flour
  • 1 C. buttermilk
  • 1/2 C. warm water
  • 3 tbs cocoa
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • chocolate frosting

Cream butter. Gradually add sugar, beating until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add flour alternately with buttermilk, beginning and ending with the flour. In another bowl, combine water, cocoa, and soda. Mix well. Slowly add to the flour mixture, beating well. Add vanilla. Pour into two nine-inch round cakepans. Bake at 350 for 35-40 minutes until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes before removing. Cool on wire racks. Frost.

Chocolate Cream Cheese Frosting

Ingredients

  • 3 oz unsweetened choc
  • 1/4 C. butter
  • 8 oz cream cheese, softened
  • 3 C. sifted powdered sugar, divided
  • 1 tbs + 1 tsp whipping cream
  • 1/2 tsp vanilla extract

Melt chocolate; cool. Cream butter and cream cheese; add 1 C. powdered sugar, chocolate, whipping cream and vanilla. Beat well at low speed of electric mixer. Add remaining sugar; beat until thick enough to spread.
