"WORLD'S GREATEST ..little..SECRET BARBECUE SAUCE"

1 cup mustard (standard yellow hot dog mustard)
1 & 1/2 cups tomato ketchup (Heinz is best)
1 cup white vinegar
1 tablespoon black pepper (freshly ground if possible)
1/2 tablespoon salt
1/2 cup white sugar
3/4 tablespoon chili powder
3/4 tablespoon garlic powder
2 tablespoons cayenne pepper
Mix in a blender. Allow to sit in refrigerator overnight.

All South Barbecue Rub

2 tablespoons salt
2 tablespoons black pepper freshly cracked
2 tablespoons sugar .. 2 tablespoons brown sugar
1 tablespoon cayenne pepper
2 tablespoons ground cumin .. 4 tablespoons paprika .. 2 tablespoons chili powder

All you do is throw them together and mix them well.

Kentucky Jam Cake

3 cups unsifted flour
1 Tbls baking soda
2 tsp ground cinnamon
1/2 tsp ground allspice
1 cup (2 sticks) margarine, softened
3/4 cup sugar
5 eggs, separated
1 jar (10 oz Red Raspberry or 1 jar (10 oz seedless black raspberry jam)
1 cup buttermilk

COMBINE flour, baking soda, ground cinnamon, and allspice; set aside.
Cream margarine and 3/4 cup sugar until light and fluffy.
Beat in the yolks. Add preserves / jam.
Alternately add flour mixture with buttermilk until well blended,
starting and ending with dry ingredients.
Beat egg whites until stiff.
Fold beaten whites into jam mixture.

Pour into three greased and floured 9-inch round cake pans.
Bake at 350 degrees about 40 minutes or until done.
Cool in pans 10 minutes.
Remove from the pans and finish cooling on wire racks.

Banana Pudding

3 eggs, separated .. 2 cups milk
1 cup plus 3 tablespoons sugar, divided
4 tablespoons cornstarch, divided .. 1 teaspoon vanilla
2 tablespoons or 1/4 stick butter
2 banana sliced ..vanilla wafers

In a large glass bowl, beat egg yolks.
Add the milk and continue beating.
When smooth and bubbly on top,
add 1 cup of the sugar and 3 tablespoons of the cornstarch.
Beat until well combined.
Cover the bowl with plastic wrap & puncture a hole in top with a knife.
Cook in microwave on HIGH for three minutes.
Whisk and re-cover with plastic wrap.
Microwave on HIGH for another two minutes.
Add vanilla and butter. Mix well and add banana slices and wafers.

MERINGUE
In another bowl, beat egg whites
add the remaining tablespoon cornstarch & the three tablespoons of sugar.
Beat well until stiff peaks form.
Spread the meringue over the pudding mixture.
Bake at 400 degrees F. for 6 to 8 minutes or until brown.
When done, line pudding with vanilla wafers.

Salmon Patties

8 oz Can red salmon, drained and reserve juice
1/4 cup Finely chopped onions
2 tbsp Fresh parsley .. 1 Egg
1-1/2 tsp Lemon juice
2 tbsp Salmon juice
1/2 cup Fine bread crumbs or flour
1 tbsp each Oil and butter

Drain and mash salmon lightly, reserve juice, set aside.
Mix together salmon, eggs, onions, parsley & lemon juice.
Add bread crumbs & 2 tbsp reserved juice.
Add more juice if mixture too dry.
Form into small patties & fry over medium heat,
in a mixture of oil & butter, adding more if needed,
until heated through and nicely brown.



Peanut Butter Candy

2 cups sugar
1 teaspoon butter
1/2 cup milk (enough to wet the sugar)
1 teaspoon vanilla flavoring
2 heaping tablespoons peanut butter

Mix together the sugar, butter and milk in a cooker.
bring to a boil on medium heat, boil 5 to 7 minutes.
stirring often (until a small drop forms a soft ball when dropped in cold water,
take it off the heat, add vanilla flavoring and peanut butter.
pour into a well buttered plate, let it cool then cut into squares and enjoy.



Cabbage Salad

8 cups shredded cabbage
1 large onion, thin sliced
2 tbls sugar .. if desired
1 cup vinegar .. 3/4 cup salad oil .. 1/2 cup mayo
1 chopped tomato .. salt to taste .. green peppers ..carrots

Layer cabbage/green peppers/carrots/onions/tomato/mayo/sugar in large bowl.
Heat oil, vinegar, and salt.
Pour over Cabbage and sugar mixture.
Marinate 3 to 4 hours in refrigerator.
Keeps for long time in refrigerator.

Turkey Reuben Melts
1 cup sliced green onions ___ 1 tsp. oil
1/2 cup Thousand Island dressing
8 slices rye bread ___ 8 slices turkey breast, cooked
8 slices Swiss cheese ___ Butter

In a nonstick skillet, sauté green onions in oil.
Spread each slice of bread with a thin layer of dressing.
Layer each slice with turkey breast and Swiss cheese.
Combine sandwiches to make 4.
Melt a small amount of butter in skillet & brown each sandwich on both sides.
Slice and serve hot. ___ Serves 4.

Old Fashioned Turkey Casserole

2 cups macaroni .. 2 Tablespoon butter .. 1/2 cup milk
1 cup sliced mushrooms .. 1/4 cup minched onion
1 can (11 oz.) condensed cheddar cheese soup
1 can (11 oz.) condensed cream of chicken soup
2 cups cooked turkey, diced
1 teaspoon tarragon .. 1/4 teaspoon pepper
1/2 cup buttered breadcrumbs

Preheat oven to 350.
Cook macaroni in boling salted water until slightly firm.. Drain.
In saucepan combine butter, mushrooms, and onion.
Fry [Saute] over medium-low heat until tender.
Stir in remaining ingredients, except macaroni and breadcrumbs.
Heat sauce five minutes over low heat. ..Stir in macaroni.
Pour into 2 - 1/2 quart buttered casserole and bake 30 minutes.
Remove from oven and top with breadcrumbs.
Continue baking 10 more minutes. ... Serves 6.

Chicken and Dumplings
(A Southern Favorite)

3 cups cooked chicken
3 cups water
2 medium potatoes, peeled, cut into chunks
1 medium onion, diced
2 stalks celery, diced
1/4 teaspoon basil
1/4 teaspoon Italian seasoning
1/2 teaspoon meat seasoning
1 teaspoon salt
2-1/2 cups chicken broth or water
2 teaspoons chicken bouillon granules
1 (16 ounce) can peas and carrots
Bisquik Dumplings (follow recipe on box)

In large pot, add water and chicken breasts
and gently boil for about 30 minutes or until tender.
Remove chicken to cool.
Strain broth and reserve 2-1/2 cups.
Cut chicken into bite-sized pieces.
Return to pot.
Add 2-1/2 cups of chicken broth, potatoes, onion, celery, basil,
Italian seasoning, meat seasoning, and chicken bouillon.
Simmer for about 20 minutes.
Add peas and carrots.
Simmer about 10 minutes longer.
Drop dumplings into pot about five minutes before serving.

Serve hot!

Original KY Chicken and Dumplins.. Per Request

3 boneless chicken breasts
5 cans chicken broth
2 cups self-rising flour
Salt and pepper to taste

Cook chicken, cool, and pull into small pieces.

In bowl add 2 cups flour and 1 cup broth, stir until flour is moistened.
On floured surface turn out dough mixture. Sprinkle dough with flour and knead.
Shape dough into a ball, sprinkle with flour, and roll out. Cut into strips.
Place chicken and broth into a heavy kettle and bring to a rolling boil.
Drop dumplings in kettle. Do not stir, press down with spoon to make more room.
Cook on medium until done. If you like thick broth, simmer for an extra 15 minutes.

Strawberries Alabama
3/4 stick margarine ... 1 1/2 cup confectioners sugar .. 2 eggs
1/2 cup nuts .. 1/2 pint whipped cream .. vanilla wafer crumbs
1 quart strawberries .. Cream margarine and sugar.
Add eggs and beat well. .. Add nuts.
Place a thick layer of vanilla wafer crumbs in a 9x9-inch pan.
Pour creamed mixture over crumbs.

Whip cream and fold in fresh strawberries.
Spread over creamed mixture.
Sprinkle with additional wafer crumbs.
Recipe may be doubled.
If doubled, use a 9 x 13-inch pan.

Baked Potato Wedges
(Better than fries could ever be!)

2 very large baking potato
Italian seasoning
Garlic salt
Black, or if you dare Cayenne, pepper
Dried minced basil
No-stick cooking spray

Wrap each potato in plastic wrap.
Microwave 5 minutes on high.
Turn potatoes 90 degrees.
Microwave another 5 minutes.
Test potatoes.
They should be firm yet yield slightly when firmly squeezed.
Let wrapped potatoes rest for at least 10 minutes to complete cooking.
Uncover and cool until they can be handled.
Cut each potato lengthwise into eight spears.
Place skin side down on baking sheet, not touching.
Spray each potato generously with no-stick cooking spray.
Sprinkle the seasonings generously over the spears.
Bake in 350 degree oven for about 20 to 30 minutes, or until golden brown.


Peanut Butter Pie
1 cup peanut butter
6 oz. cream cheese
2 cups sugar
1 large bowl cool whip

Beat all ingredients together and pour into a graham cracker pie crust.
Refrigerate until ready to serve.


Chocolate Gravy
1 quart milk
1 1/4 cup sugar
5 tablespoons flour
1/2 cup cocoa

Add milk to saucepan.
Mix sugar, flour and cocoa together, stirring well.
When hot, stir sugar mixture in, slowly, stirring to keep from creating lumps.

Red Eye Gravy
drippings from fried country ham
1 cup strong coffee

Remove ham from skillet after fried.
Add coffee and bring to a boil.
Reduce heat and simmer 5 minutes.

Jimmy's "Safe Harbor"~Hot Biscuit * Tomato gravy~

Microwave Fudge
1 cup cocoa,
2 lbs. sugar
1/2 cup homogenized milk
2 sticks margarine
2 teaspoons vanilla
1 cup chopped nuts (optional)

Sift cocoa and sugar in large mixing bowl.
Add milk and place margarine sticks on top

Do Not Stir.

Cook on high for 6 minutes.
Remove from microwave and stir thoroughly.
Add vanilla flavoring and nuts.
Pour into buttered platter.
Cool in refrigerator for 1 hour.
Cut and serve.
Do Not Double This Recipe.

Fruit Cobbler
Makes four to six servings

1/4 cup margarine or butter
3/4 cup self rising flour
2 teaspoons baking powder
1/2 cup skim milk
1/2 cup sugar plus 2 tablespoons
1 (16 oz.) can pie filling - peach, cherry, apple OR blueberry

Preheat oven to 350 degrees.
Place margarine in 8x10-inch casserole dish,
and microwave on 50% power for 2 minutes
or until margarine is melted.
Make a batter by mixing flour, baking powder, milk and 1/2 cup sugar.
Mix well and pour over margarine.
Evenly spread pie filling over batter.
Bake about 25 minutes.
Then sprinkle with 2 tablespoons of sugar
(this will be after batter comes to top).
Continue to bake an additional 10 to 15 minutes until done
and toothpick inserted in center come out clean.

Serve warm or hot with a scoop of vanilla ice cream.

2 Tablespoon forgiveness
1/4 cup pure hugs
3 cups generosity
First, combine Loyalty, Understanding
and 1 1/2 cups of Generosity in a large bowl.
Gently stir in the love and mix well.
Add a packet of laughter.
Stir continously for 1 minute.
Blend in Forgiveness and Hugs.
Add the remaining 1 1/2 cups of Generosity;
carefully folding the mixture until the texture is smooth.

Laine's Corn Bread

1 1/2 cups self rising corn meal.
I prefer Martha White.
1/2 cup flour ..self rising.
1 or 2 tablespoons sugar (Optional)
2 large eggs -- lightly beaten
1/2 cup water.. or enough to make it smooth.

Mix cornmeal, flour, sugar, eggs, cold water.
Mix until smooth. Pour into well oiled hot skillet.
A seasoned cast iron skillet is best.

Bake 15-20 minutes.. or until lightly browned ..in 425 degree oven.

Fried Catfish

3/4 Cup yellow cornmeal
1/4 Cup Martha White flour
2 Teaspoons salt
1 Teaspoon cayenne pepper
1/4 Teaspoon garlic powder
4 Catfish Fillets
Vegetable Oil

Combine cornmeal, flour, salt, cayenne pepper and garlic powder.
Coat catfish with mixture, shaking off excess.
Fill deep pot or 12-inch skillet half full with vegetable oil.
Heat to 350 degrees.
Add catfish in single layer, and fry until golden brown,
about 5 to 6 minutes, depending on size.
Remove and drain on paper towels.

3 hard boiled eggs diced

In a Large Bowl, crumble cornbread.
Add next 5 ingredients and
..then stir in Miracle Whip to taste.
Should be a creamy consistancy.
It may take the whole jar because
the cornbread absorbs most of it.

Refrigerate for 2 .. 4 hours before serving.
The colder the better.

PORK CHOPS WITH APPLE RAISIN STUFFING
from JO .. Via Reta

1 Cup applesauce .. 1/2 Cup water
2 Tablespoons margarine or butter, melted
1 Stalk celery, chopped (about 1/2 cup)
2 Tablespoons raisins
4 Cups pepperidge farm herb seasoned stuffing
4 Boneless pork chops, 3/4 inch thick (about 1 pound)
Paprika or ground cinnamon

Mix applesauce, water, margarine, celery and raisins.
Add stuffing.
Mix lightly spoon into 2-quart shallow baking dish.
Arrange chops over stuffing. .. Springle paprika over chops.

Bake at 400 degree oven for 35 minutes or until chops are no long pink.
If desired, garnish with apple, fresh chives and fresh sage.
Makes 4 servings ..prep time: 15 minutes ..cook time: 35 minutes

Root Beer Baked Beans

2 strips bacon, diced
1 small onion, diced
2 jars (18 ounces each) baked beans
1/2 cup root beer (do not use diet)
1/4 cup barbecue sauce
1/2 teaspoon dry mustard
several drops hot pepper sauce
freshly ground pepper to taste

Cook bacon with onion in a medium saucepan until bacon is brown and crisp.

Add remaining ingredients. Heat to a boil;
reduce heat and simmer, stirring often, until slightly thickened, 20 minutes.

Serves 6.

FRIED GREEN TOMATOES

4 large green tomatoes, sliced 1/4 inch thick
1/4 cup flour
1 egg, beaten
1/2 tsp. hot pepper sauce.. Or to taste
1/2 tsp. salt
dash black pepper
1 cup fine bread crumbs
oil for frying

Coat tomato slices with flour, then dip in egg
(seasoned with salt, pepper, and hot sauce)
and finally in bread crumbs.
Over hedium heat, brown on both sides in a skillet with 1/2 inch of oil.
Serve hot, with extra hot sauce, if desired.

KENTUCKY BURGOO

This recipe makes 1200 gallons

"Kentucky Burgoo" is the celebrated stew which is served in Kentucky on Derby Day, at Political Rallies, Horse Sales and other outdoor events. This recipe is from a hand written copy by Mr. J. T. Looney, of Lexington. Mr. Looney is Kentucky's most famous Burgoo-maker and it was for him that Mr. E. R. Bradley named his Kentucky Derby winner "Burgoo King".
Mr. Looney uses a sauce of his own in the preparation of this truly-amazing concoction.
Mr. Looney is invited to all parts of the country to prepare Burgoo for large gatherings. This is not a dish to be attemped by an amateur though it can be prepared in smaller quantities. It is a very picturesque sight to see Mr. Looney, aided by his many assistants, preparing this dish over open fires and huge kettles which are kept simmering all night.

600 pounds lean soup meat (no fat, no bones)
200 pounds fat hens
2000 pounds potatoes, peeled and diced
200 pounds of onions
5 bushels of cabbage, chopped
60 ten-pound cans of tomatoes
24 ten-pound cans puree of tomatoes
24 ten-pound cans of carrots
18 ten-pound cans of corn
Red pepper and salt to taste
Season with Worchestershire, Tabasco, or A#1 Sauce

Mix the ingredients, a little at a time, and cook outdoors in huge iron kettles over wood fires from 15 to 20 hours.

Mint Julep


The celebrated mint julep came from the Kentuckians' taste for distilled spirits. The origin is unknown, but one legend is that a nineteenth century Kentucky boatman on the Mississippi River went ashore in search of spring water to mix with his bourbon. On a whim.. he is said to have added some mint growing by the spring. Nineteenth century juleps frequently contained wine or brandy, but Southerners turned to bourbon whiskey, which is still the ingredient of choice in Kentucky. It has remained much in favor with genteel Kentucky society and is a tradition associated primarily with the Kentucky Derby.

Traditionally the whiskey used is straight aged Kentucky bourbon.
The chilled cup in which the mint julep is served.. is.. also by tradition, made of sterling silver ..(originally coin silver).. about 4" tall and 3" in diameter. A specially designed julep cup is presented to the Kentucky Derby winner each year. In the absence of silver.. a tall glass is acceptable. The water must be cold and.. if possible.. from a limestone spring. The sugar is either granulated or powdered.. and the ice is usually crushed but may be shaved. Some prefer to sip the concoction through a straw while others drink straight from the cup.. careful to hold the cup only by the rim so as not to disturb the frost on the silver.

The only consensus on the mint.. The freshest available.

Mint Julep Cup
The Perfect Mint Julep
You will need..

2 cups granulated sugar
2 cups water (branch water is ideal)
Fresh Mint
Crushed Ice
Kentucky Bourbon (2 ounces per serving)

Make a simple mint syrup* by boiling sugar & water together for 5 minutes.. cool.
Place in a covered container with 6 or 8 bruised mint sprigs.
Refrigerate overnight.
Make a julep by filling a julep cup* or glass with crushed ice,
then adding 1 tablespoon of mint syrup and 2 ounces of bourbon.
Stir rapidly with a spoon to frost outside of cup or glass.
Garnish with a fresh mint sprig..

*This makes enough syrup for about 44 juleps.

Extra Tips..
Always use a premium Kentucky bourbon
Use crushed or shaved ice and pack in cup.
To bruise mint, place in a cup and gently pass the back of a spoon
between cup and the leaves a time or two.
You want the mint to release some of the fragrant oils.
Add a straw cut to protrude just above the rim of the cup and serve.
You should be able to get a faint whiff of the mint sprig when you're sipping.
Keep the covered syrup in the refrigerator
(after removing the mint leaves)
if you don't plan on drinking all the servings.

Recipe for 1 drink...
In a bowl, place several fresh mint sprigs,
1 tsp. of sugar and 1/4 ounce of water.
Crush the leaves with a spoon and stir all well.
Fill a chilled tumbler with crushed ice,
fill with Bourbon, and top with strained mixture.
..Or place a bit of the mixture into the chilled glass.
Add a layer of crushed ice.
Continue at least one more time, topping with ice.
Pour Bourbon on top.
Garnish with fresh mint sprigs.

Over 80,000 Mint Juleps are served over the two-day period of the Kentucky Oaks and Kentucky Derby..
requiring 8,000 quarts of Julep Mix..
150 Bushels of Mint and 60 tons of snow ice.



Kentucky Egg Nog

Makes six servings

6 large egg yolks
1/2 cup sugar
2 1/2 cups milk
1/4 cup Kentucky Bourbon
1/2 teaspoon vanilla
1/4 teaspoon nutmeg

In medium saucepan, beat egg yolks & sugar together.
Slowly stir in 2 cups of milk.
Cook over medium heat & stir until mixture coats the back of the spoon.
Remove from heat & strain into pitcher.
Stir in remaining milk, Bourbon, nutmeg, & vanilla.
Cover & chill at least 8 hours.
When serving, garnish with light sprinkles of additional nutmeg.

Zucchini Casserole

350 degrees ... 45 min. ... 9x13 glass casserole dish

1 package Stove Top Stuffing Mix
2/3 Cup water
1 T butter
Mix together, reserve 1 Cup for topping,
pour remainder into greased dish for bottom layer.
Layer on top of stuffing mix:
1 lb. Ground beef, browned and drained
(note: add ˝ lb ground sausage if doubling recipe)
4 Cups cubed raw zucchini
2 Cups grated carrots

Mix together:
1 small chopped onion
(option: use green onions to equivalent)
1 Can Cream of Chicken soup
(note: add 1 Can Cream Mushroom soup if doubling recipe)
˝ C milk
1 Cup low fat (or regular) sour cream
1 Can sliced mushrooms
salt and pepper to taste
Pour over casserole.
Top with remaining stuffing mix,
sprinkle shredded cheese to taste.
Cover loosely with foil or else cheese gets too brown.
Bake as directed above.



Old-fashioned Macaroni and Cheese

1 cup of macaroni noodles
4 eggs
3 cups of milk
salt & pepper to taste
8 oz. sharp cheddar cheese
2 tbsp. of butter
Directions:

Preheat oven to 325 degrees.
Cook the macaroni until tender, then drain.
While the macaroni is cooking, beat eggs and milk well.
Add salt and pepper to taste.
Add grated cheese to the egg/milk mixture and mix well.
Add the cooked macaroni to the cheese mixture and stir well.
Transfer the mixture to a casserole dish and put pats of butter on top.
Bake for one hour at 325 degrees.


Kentucky Pecan Pie

1 cup white corn syrup
1 cup dark brown sugar, packed
1/3 teaspoon salt
1/3 cup butter, melted
1 teaspoon vanilla
3 eggs, slightly beaten
1 heaping cup whole pecans
Unbaked 9-inch pie crust

Combine syrup, sugar, salt, butter and vanilla and mix well.
Add slightly beaten eggs.
Pour into unbaked pie shell.
Sprinkle pecans over all.
Bake in preheated 350° oven 45 minutes.
When cool, top with whipped cream or ice cream.
